Longaberger - Microwave Potatoes with Kathy Eakle


4 or 5 large potatoes
2 tablespoons of extra virgin olive oil
2 tablespoons of Parmesan Garlic Seasoning (Longaberger, of course)
1 Medium Roundabout Casserole (your choice of color)

Wash potatoes well. Cut them in small bite size cubes, leaving the peel on. Place them in the Roundabout Casserole. Add olive oil and stir to coat well. Then add the Parmesan Garlic Seasoning and stir to coat well. Place lid on casserole and cook on HIGH in the microwave for 10 to 12 minutes. Let stand covered for another 5 minutes. Ready to serve.
